Juicy, ripe, tangy, and fresh flavors are what you can look forward to as our kitchens start to plate the tastes of spring and summer. After a winter filled with rich, buttery, hearty, and toasted flavors we are excited to start treating our guests to ingredients of the new seasons. Stone fruits, brambles, and melons, among others will start to take center stage in both sweet and savory dishes throughout the Bartolotta kitchens. We explored some of the dishes and ingredients that our chefs will be showcasing in the next few months. Join us as we celebrate the changing of seasons and treat our guests to the best ingredients we can source.
Seasonal Sangrias
Enjoy peaches, strawberries and a variety of citrus added to our seasonal sangria recipes, oftentimes included as a Happy Hour special, depending on the restaurant. Harbor House incorporates such ingredients into its Harbor Mist Sangria comprised of citrus Vodka, Domaine de Canton, peach Schnapps, Rosé, guava purée, and ginger ale top, served over ice.
Bramble Pavlova
Pastry Chef Courtney Beyer at Bartolotta's Lake Park Bistro shared her recipe for a meringue-based cake named after the Russian ballerina, Anna Pavlova. Using egg whites, sugar, vanilla, lemon juice, and cornstarch to create the light and airy meringue it is then topped with sweetened, house-made whipped cream and macerated raspberries and blackberries. A juicy and light dessert to be enjoyed all summer long!
Roman-Style Artichokes
Artichokes are a spring vegetable and tend to come into their peak between March and May, and possibly into early June. Executive Chef Juan Urbieta at Ristorante Bartolotta dal 1993 shared his preference for Roman Artichokes that he will put on his Menu dello Chef as the ingredient becomes available. The artichokes are cleaned and cooked over medium flame and topped with garlic and mint leading to a pungent yet clean flavor profile, a great way to start a light spring meal in the cozy dining room at our flagship restaurant.
